The book is wonderful! The recipes are easy to prepare, and most of the ingredients are items that are always in the kitchen or can be found in any grocery store.The recipes are well organized.The 30-day meal plan is very useful. Everything is laid out, so you don't have to guess what to cook and when.An excellent choice if you need a practical and easy-to-use cookbook for beginners with diabetes.Just open the page and start cooking. It's so simple and so useful.

Diabetic-friendly recipes

The recipes in the book are easy to read and follow. The recipes did not have a lot of ingredients, making them perfect for everyday meals.I really like the book's organization: - Each recipe starts on a new page, so I'm not flipping back and forth with messy hands. - The instructions are numbered clearly (1, 2, 3, 4), making it easy to pick up where I left off - Each recipe includes tips and tricks, for example, how to achieve extra crispiness - It includes cooking time and nutritional facts. - Each recipe has an image. The images are AI-generated, so I think of them as illustrations, as if they were drawn. While not as good as an actual picture of the prepared dish, it still gives me an idea of what the prepared dish will look like.I was surprised that the recipes shown on the cover (chicken with avocado, shrimp with pineapple, chicken with peppers, and chia seeds with fruits) aren't in the cookbook, which was a letdown since I was excited to try them. I am also not entirely sure what the "2000 days" reference on the cover means. The book has far fewer than 2000 recipes.I was disappointed by the lack of an ingredient index. I like to cook based on what's in my fridge, so the lack of the ingredient index forced me to flip through pages to find recipes that matched what I had. An index by ingredient would've made this easy. Maybe in the next edition?Despite the minor nitpicks above, I thought this cookbook was a good choice for anyone looking for simple, tasty, and diabetic-friendly recipes.

My Favorite Part Is the Variety

There are so many different meals in here. I didn’t feel like I was eating the same thing over and over again. Tried the veggie stir-fry and the low-carb tacos, and both were hits. I like that the instructions are short and easy to follow. Definitely keeping this nearby when I plan my meals each week.
